Mexican Potato Sausage Casserole
Our Southwest Hash Browns and spicy sausage give this hearty egg bake real Mexican flavor. It makes a great brunch dish or easy dinner.
Instructions:1. Heat oven to 350°F. Spray 8 or 9-inch square baking dish with nonstick cooking spray. In 10-inch skillet cook sausage and green pepper over medium-high heat 8 to 10 minutes or until sausage is browned and cooked through; drain.
2. Place half of the Simply Potatoes in prepared baking dish. Top with half of the sausage and 3/4 cup of cheese; repeat.
3. Combine eggs and milk in medium bowl; beat well with fork. Pour egg mixture evenly over layered mixture in pan. Cover with foil; bake for 45 minutes. Uncover; add chopped tomato and remaining 1/2 cup cheese. Bake, uncovered, for an additional 10 to 15 minutes or until knife inserted in center comes out clean.
4. Let stand 10 minutes before serving.

This is a favorite at our house! We just call it the Breakfast Casserole! It is served throughout the year, but always on Christmas morning. And it is a HUGE hit when I take it to an office potluck, and I get requests to make it every year at office functions!

Made this Christmas Eve to serve Christmas morning. Tweeked a bit because I didn't have chorizo so I used bacon cooked & crumbled as well as a preshredded Mexican cheese blend. I also browned the potatoes a bit before using & added a couple extra eggs to stretch it a bit. My family loved it & my daughter is excited to try it with chorizo. It didn't say it could be made ahead, refrigerated & baked the next day, but that's what I did & it was perfect.
