Springtime Potato Salad
Looking for a lively new potato salad recipe? This one has a hint of Dijon mustard and ground red pepper that adds a unique zip to this side dish.
Preparation Time: 20 minutes  
Time-To-Table: 1 hour  20 minutes  
Serves: 8

Ingredients:
  • 1 package Simply Potatoes® Red Potato Wedges
  • 1/3 cup water
  • 1/2 cup frozen green peas
  • 2 celery stalks, sliced
  • 2 tablespoons rice or white wine vinegar
  • 1/2 cup light mayonnaise
  • 3 tablespoons chopped fresh chives
  • 1 teaspoon Dijon mustard
  • 1 teaspoon finely chopped garlic
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon cayenne pepper
  • salt and pepper

Instructions:
    1. Place Simply Potatoes and water in large microwave-safe casserole dish. Cover; microwave on HIGH 8 to 10 minutes or until Simply Potatoes are tender. Gently stir in peas, celery and vinegar.

    2. In small bowl add all remaining ingredients; stir until well blended. Season with salt and pepper. Refrigerate 1 hour to blend flavors.
