1. In a 12-inch nonstick skillet, heat oil on medium-high heat. Add Simply Potatoes, ham and onions. Cook for 8 to 10 minutes, stirring occasionally, until potatoes are golden brown. Season with salt and pepper.
2. Stir together Better’n Eggs® and milk in medium bowl; pour into skillet. Reduce heat to medium; continue cooking, stirring occasionally, until Better’n Eggs® are set but still moist. Remove from heat; sprinkle with cheese. Cover and let stand until cheese is melted. Sprinkle with green onion if desired.
