Simply-fied Creamy Vinaigrette Potato Salad

This summery potato salad recipe is easy to make with a few simple ingredients. The mustard and mayonnaise give it a bit of creaminess with a nice splash of tarragon vinegar.

Ingredients:

  • 1 package Simply Potatoes® Diced Potatoes with Onion
  • 2 tablespoons tarragon or white wine vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon honey Dijon mustard
  • coarse salt and freshly ground pepper, to taste
  • large stalks celery, halved lengthwise, sliced crosswise
  • 1/4 cup light mayonnaise

Instructions:

1. Place potatoes and ¼ cup water in a microwaveable bowl.* Cover; microwave on HIGH heat 10 to 12 minutes, until potatoes are tender.

2. Mix vinegar, oil, mustard, salt, and pepper together in small bowl. While still warm, gently toss potatoes with vinaigrette until well blended.** Let cool 30 minutes.

3. Transfer potatoes to a large serving bowl. Add celery; gently stir in mayonnaise until all ingredients are well coated. Cover and refrigerate until ready to serve.***


Tips & Substitutions:

* Place 1 package Simply Potatoes® Diced Potatoes with Onion in a medium saucepan with 1/2 cup water. Bring to a boil; reduce heat to medium-low and cover. Cook about 10 minutes or until potatoes are just tender.

** Tossing the potatoes with the vinaigrette while they’re still hot helps them really absorb the flavors.

*** Sprinkle salad with sliced green onions or chopped celery leaves for a fresh, summery finish.
